cookie week (1) Night 5

Done for the evening-10:45 pm. Made the caramel rosemary chocolate bars. Pain in the patooty. Have ot make them again tomorrow when the diva ladies are here. I hate making them-but i love eating them! ah the love hate relationship with some of these cookies continues.



Three 5 lb bags of high quality baking chocolate:
bittersweet, unsweetened and semisweet (bearing no resemblance to those things that come in the yellow bag and call themselves semi sweet chocolate).
Almost out of bittersweet and semisweet. should just make it. Don't use as much unsweetened-but cheaper to buy in bulk and the only way to get good professional quality chocolate.


Tomorrow won't start till after 2:00pm-Too many things to do in the morning. But tomorrow the troops arrive so we will make bake and roll for several hours. Should get a lot accomplished. on my list:

When help arrives:
raspberry marzipan bars (quadruple recipe) Tips on making that one will be photographed. It sounds simple from is a disaster unless you do several things in the process.

Caramel chocolate Rosemary nut bars:
(by the way, you might have noticed that so far all of the cookies have been in pans. this is becuase the sheet cookies stay fresh the longest. I make the doughs for the rolled, dropped and shaped cookies and then bake them from wednesday through friday. that way they are fresh when they ship out on hopefully monday).
