Cookie week (1) : day 4

Today we make:
strawberry marzipan bars
GOoey chocolate cashew bars
Fig preserve shortbread bars
dough for Orange Almond cookies

maybe more..we'll see how the day goes. Pictures later.

Recipes
Fig preserve Walnut Shortbread Bars

Shortbread Recipe:
1 ¼ cups all purpose flour
½ cup granulated sugar
½ cup butter

Combine until like fine meal.
Press into bottom of 9” sq cake pan. Bake at 350 for 20 minutes or just until edges become golden.

Remove from oven
Spread 1/3-1/2 cup raspberry jam over warm shortbread

Topping:
2 Eggs
½ cup packed brown sugar
1 teaspoon vanilla
2 tablespoons flour
1/8 teaspoon salt
1/8 teaspoon baking soda
1 cup chopped walnuts

Beat eggs with sugar and vanilla until well blended. Stir in flour, salt and baking soda mixture. Add walnuts. Spoon over jam-spread lightly to corners.

Bake 20-25 minutes until top is set. Cool in pan, then cut into bars.


Strawberry Marzipan Bars
Crumb Mixture
1 1/2 cups flour
1/3 cup firmly packed brown sugar
1/2 cup unsalted butter
1/8 teaspoon salt

Filling:
3/4 cup flour
1/2 firmly packed brown sugar
1/4 cup unsalted butter
1/4 teaspoon salt
1/2 teaspoon almond extract
3/4 cup raspberry or strawberry preserves (or other flavor that you would like)

Glaze:
3/4 cup confectioner's sugar
1 tablespoon milk
1 teaspoon almond extract

Preheat oven to 350
grease and flour 9" sq baking pan
combine all crumb ingredients in mixer. beat on low till combined and crumbly.
(1-2 min)
press into pan, bake about 15 minutes till slightly browned.
meanwhile, combine all filling ingredients EXCEPT preserves and beat on low spead until well mixed. (1-2 min).
spread preserves onto cooked hot crust.
sprinkle filling over preserves. press down a little
return to oven and bake 20-25 min or until edges are slightly browned.

Mis glaze ingredients until smooth. cool bars completely. drizzle glaze over bars. cut into desired sizes.
