Cookie week (1). Day 1:

Picked the recipes and now have to go over the list of recipients. How many cookies do I need this year? here's the process:
1) figure out who gets cookies
2) figure out how big a box they get (Small, medium, large, group)
3) calculate how m any cookies I will need based on how many of what type of box.

So, last year I needed about 3500 cookies. this year I am going to supplement cookies with homemade nut roll for the group boxes. That means less cookies.

I have picked 12 cookies to make (down from 26 in previous years). I will make more of each type as well as using the nut rolls to change the amount of cookies I need to make.

Once i know what recipes and how many of each I can put together the shopping list. some things are a given:
25 lbs of sugar
40lbs of flour
30 lbs of butter
15 lbs of various types of nuts
5 lbs of bittersweet chocolate (block)
10 lbs brown sugar

after that its down to the individual recipes and each item that is needed.

Tomorrow I shop and start on the boxes.
